BAKED GEORGIA CORN CASSEROLE

 

 

Baked Georgia Grown Corn Casserole

 

 

2 large eggs, beaten

1 ½ cups sour cream

2 cups fresh Georgia corn kernels, uncooked

2 cups shredded Monterey Jack cheese

1  4.5-ounce can chopped green chilies, drained

Salt and pepper to taste

½ cup shredded Cheddar cheese

 

Preheat oven to 350º.

 

Combine eggs and sour cream, stirring until well blended.  Stir in remaining ingredients except for Cheddar cheese. Pour into a prepared quiche dish or 8” by 8” casserole dish. Top with remaining cheese. Bake uncovered for 35 minutes or until center is done.

 

Serves 6
