12 oz. package Apple Chicken Sausage or other link sausage, sliced

3 tablespoons butter

1 Vidalia onion, cut into strips

2 cloves minced garlic

1 zucchini cut in half circles

1 yellow squash, sliced thin

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 cup sliced mushrooms

1/2 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes

Salt and pepper to taste




Melt butter in large skillet over medium heat.


Add sausage, onion and garlic, and saute’ 10 minutes. 


Add remaining ingredients and sauté about 10 minutes or until vegetables are tender.


Serve with rice if desired.
