Spinach Squares



1 cup all-purpose flour

1 teaspoon salt

1 teaspoon baking powder

2 eggs, beaten

1 cup milk

1/4 cup melted butter

1/2 cup chopped onion

4 cups shredded cheddar cheese

12-ounce package frozen chopped spinach (thawed and well drained*)




Preheat oven to 350º.


In a large bowl combine flour, salt and baking powder. Stir in eggs, milk and butter.  Add onion, cheese and spinach.  Place in an 8-inch casserole and bake for 35 minutes.


When cool, cut into squares.

These freeze well and can be made ahead of time.  



* The best way to completely drain spinach is to squeeze the water out
