GEORGIA SWEET POTATO SOUFFLE CRUNCH

 

 

3 cups cooked, mashed Georgia sweet potatoes
1 cup sugar
1/2 teaspoon salt
2 eggs, beaten
2 1/2 tablespoons butter, melted
1/2 cup milk
1 teaspoon vanilla

 

 

Mix all ingredients and pour into a greased 9" x 13" baking dish.

 

 

CRUNCH TOPPING
 

2 1/2 tablespoons butter
 1 cup brown sugar
1/3 cup flour
1 cup chopped Georgia pecans

 

 

Combine all topping ingredients, and carefully cover sweet potatoes.

 

Bake at 350º for 35 minutes.

 

 

Note: You can reduce the amount of sugar in the recipe, if desired.
