SWEET AND SPICY WINGS
1 1/4 cups hoisin sauce*
1/2 cup packed brown sugar
1/4 cup soy sauce
1 tablespoon red pepper flakes
2 teaspoons minced garlic
30 chicken wings, about 4 pounds
Combine all ingredients except chicken wings, pour about 2/3 of the mixture over wings and marinate in refrigerator at least 1 hour or overnight. Reserve and refrigerate remaining marinade mixture.
Preheat oven to 425º.
Remove wings from marinade and discard marinade, bake wings in a single layer on a lightly greased baking sheet for 10 minutes. Baste with reserved marinade, turn wings and baste again. Bake for an additional 10 to 15 minutes or until the internal temperature on one of the largest wings reaches 165 degrees.
*Hoisin sauce can be found in a jar in the Asian section of the grocery store.
