FRESH TOMATO PIE
2 to 3 cups coarse chopped tomatoes
1/2 teaspoon salt and pepper
9 fresh basil leaves, chopped
1/2 cup chopped onion
1 9-inch pie crust, pre baked according to package directions
1 cup grated Sharp Cheddar cheese
1 cup grated Mozzarella cheese
1/2 cup good quality mayonnaise
Salt and pepper to taste
Preheat oven to 350º.
Place chopped tomatoes in a colander to drain, and sprinkle with 1/2 teaspoon salt and pepper.
In a bowl combine cheeses and mayonnaise.
To assemble pie, place onions in bottom of baked crust, spread chopped drained tomatoes evenly over onions, then add basil leaves, and (if desired) salt and pepper to taste. Gently place cheese mixture over top and spread until mixture almost touches edges of pie shell.
Bake pie for about 30 minutes, or until lightly browned. Serve warm.
