Easy Egg Bites

If you're lookin’ for a quick and easy breakfast that sticks to your ribs, look no farther than this simple egg bite recipe that we found from Joyous Apron!
These fluffy little bundles of goodness—made with farm-fresh eggs, crispy bacon, creamy cottage cheese, and a hearty handful of melty Colby Jack. If you could pack a hug from grandma into a muffin tin - this is it. Whip 'em up ahead of time and grab 'em on the go—or slow down and enjoy 'em with a hot cup of coffee and some good company.
Ingredients
▢ ¾ cups bacon bits cooked
▢ 7 large eggs
▢ 1 cup cottage cheese
▢ 1 cup Colby jack cheese shredded
▢ ¼ tsp salt
▢ ¼ tsp black pepper pepper
▢ cooking oil spray
▢ tsp parsley flakes
Instructions
- Preheat oven to 325℉.
- In a medium sized mixing bowl, crack and whisk eggs.
- Add in bacon, cottage cheese, shredded cheese, salt, and pepper. Mix to combine.
- Spray a 12 cup muffin pan with cooking oil.
- Equally distribute the egg mixture among the 12 muffin cups.
- Place a pan of water on the lower rack of the oven.
- Place the egg bites in the upper rack of the oven and bake 23-25 minutes.
- Use a toothpick to check for doneness. Toothpick should come out of the egg bite clean.
- Let the egg bites cool for a couple of minutes. Remove egg bites from the muffin pan before they completely cool.
Sprinkle with parsley flakes, serve and enjoy!
