Spinach Salad with Fresh Blueberry Vinaigrette

Salad Ingredients
- 
	Fresh, baby spinach 
- 
	Red onion 
- 
	Feta cheese 
Blueberry Vinaigrette Ingredients
- 
	1 Cup of Georgia grown blueberries 
- 
	1 tablespoon of fresh squeezed lemon juice (about 1/2 a lemon) 
- 
	1/4 cup of balsamic vinegar 
- 
	1/2 cup of olive oil 
- 
	3 tablespoons of honey from Georgia 
- 
	salt and pepper to taste 



Directions
1. Slice about 1/4 to 1/2 red onion
2. Combine salad ingredients into your favorite salad bowl and sprinkle with crumbled feta cheese.
3. Add vinaigrette ingredients into a blender and combine until smooth.
4. Pour dressing over salad and toss together.
Tips of the Trade
- 
	Use strainer when juicing lemon to avoid seeds getting into your dressing 
- 
	Try toasting your pecans before adding to your salad, be careful those little babies can burn easily. 
- 
	Put vinaigrette into a mason jar, it makes it easier to pour onto the salad and it allows the beautiful, blue color to shine on your table.
