1 prepared pizza dough (about 12-inch round)
1 tablespoon olive oil from Woodpecker Trail Olive Farm
1 cup shredded Tyri Cheese: Rosemary and Thyme Creamery
1/2 cup ricotta cheese
1/2 pound ground sausage (cooked and crumbled) from Hunter Cattle Company
1/2 teaspoon red pepper flakes (or more to taste)
2 tablespoons hot honey (plus more for drizzling) from The Honey Shack
Thyme leaves, for garnish
Salt and pepper to taste
Directions
Step 1: Prepare the Dough
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat as well. Roll out your pizza dough on a lightly floured surface into a 12-inch round. If you’re using a baking sheet, oil it lightly and press the dough into shape.
Step 2: Build the Base
Brush the rolled-out dough with olive oil. This helps the crust get golden and crisp in the oven. Sprinkle shredded Tyri cheese evenly across the base, leaving about an inch around the edges for the crust.
Step 3: Add Ricotta and Sausage
Dollop the ricotta cheese over the Tyri in small spoonfuls. Then, scatter the cooked and crumbled beef sausage over the top. You want some of that crispy edge to give the pizza texture.
Step 4: Spice It Up
Sprinkle red pepper flakes over the pizza—adjust the amount depending on how spicy you like it. Season lightly with salt and pepper.
Step 5: Bake to Perfection
Slide the pizza into the hot oven (onto a stone or sheet) and bake for about 10–13 minutes, or until the crust is golden and the cheese is bubbling with lightly browned edges.
Step 6: Honey Drizzle & Serve
As soon as the pizza comes out of the oven, drizzle with hot honey while it’s still warm so it soaks into the cheese and sausage. Garnish with thyme leaves and serve immediately.

1 pizza dough for a 12-inch pizza
For the sauce:
2 tablespoons extra virgin olive oil
3 cloves garlic, minced
For the mushrooms:
3 ounces Shiitake mushrooms, sliced from Ellijay Mushrooms
1 tablespoon olive oil from Woodpecker Trail Olive Farm
1/4 teaspoon red pepper flakes
salt and pepper to taste
For the toppings:
1 cup Tyri Cheese: Rosemary and Thyme Creamery, shredded
1/2 cup fresh baby spinach leaves from Country Gardens Farm
3 ounces crumbled goat cheese
sprinkle of sea salt
For finishing:
1 tablespoon good thick balsamic vinegar from Woodpecker Trail Olive Farm
Heat oven to 550 degrees. Prepare the dough for topping as instructed.
Brush the olive oil evenly onto the dough. Sprinkle with minced garlic.
To prepare the mushrooms:
Heat the olive oil and red pepper flakes in a large skillet over medium-high heat. When the oil begins to get hot, add the mushrooms. Leave them in the pan undisturbed until browned on one side, about 2 minutes, then flip and brown on the other side. Season with salt and pepper to taste. Set aside.
To top the pizza:
Sprinkle on 2/3 of the Tyri cheese. Evenly distribute the mushrooms and spinach. Sprinkle the other 1/3 of the Tyri cheese followed by the crumbled goat cheese. Season the top of the pizza with sea salt.
Bake 13-15 minutes or until the crust is golden and the cheese is melted and bubbly.
Allow the pizza to cool 3 minutes before slicing. Slice into 6 slices. Drizzle with balsamic vinegar. Serve with more red pepper flakes (optional).

3 cooked chicken breasts diced from White Oak Pastures
1 2 ounce bottle hot sauce from Hillside Orchard Farms
2 tablespoons butter melted
1 8 ounce bottle blue cheese salad dressing
1 16 inch prepared pizza crust
½ small onion sliced from Warbington Farms
1 8 ounce Tyri Cheese: Rosemary and Thyme Creamery, shredded
Directions
Preheat oven to 425°F (220°C).
In a bowl, mix hot sauce and melted butter.
Toss diced cooked chicken into the sauce mixture.
Spread blue cheese dressing over the pizza crust.
Add the buffalo chicken evenly across the crust.
Add the sliced onions evenly across the crust as well.
Sprinkle shredded Tyri cheese on top.
Bake for 12–15 minutes until cheese is bubbly and golden.
Slice and serve hot with your favorite sides.
