Kale Caesar Salad

Looking for a fiber fix? Leafy greens, such as kale, are a great way to pack in some Vitamin A, Vitamin C and a plethora of dietary minerals. Take a trip to your local Certified Farm Market and grab a bundle of this nutrient powerful super food to make a quick and easy Caesar salad from scratch!


Caesar Salad Dressing
Ingredients
2 cloves of garlic, minced
2 large egg yolks
2 tablespoons on mayonnaise
2 tablespoons freshly squeezed lemon
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
¾ cup of olive oil
2 tablespoons finely grated Parmesan cheese
¼ teaspoon ground black pepper
Salt, to taste
Directions
Whisk ingredients together and adjust with salt to taste.


Croutons
Ingredients
Day old bread
Olive oil
Salt, to taste
Ground black pepper, to taste
Directions
Preheat oven to 350 degrees F°
Cut bread into slices and then into cubes of desired size. Drizzle with olive oil and sprinkle with salt and pepper to taste. Arrange cubes on an ungreased cookie sheet.
Bake at 350 degrees F° for 15 minutes or until golden browned. Let cool prior to dressing salad.
