Drop Biscuit Pear Cobbler
6 medium pears, peeled, cored, cut into 1/2 inch pieces
2/3 cup (packed) light brown sugar
2 tablespoons all-purpose flour
2 tablespoons fresh lemon juice
1/4 teaspoon ground cinnamon
1/8 teaspoon kosher salt
1/4 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher salt
3/4 of a cup plus 2 tablespoons sugar
1 1/2 sticks chilled unsalted butter, cut into pieces
1/3 cup hot water
Preheat oven to 400 degrees Fahrenheit. Toss pears, light brown sugar, flour, lemon juice, cinnamon, salt and vanilla extract in a large bowl. Transfer to a 13 x 9" baking dish.
Whisk together, flour, baking powder, salt and 3/4 cup sugar. With fingers, rub in butter until a coarse meal begins to form. Gradually mis in 1/3 cup hot water until a soft wet dough forms. Drop clumps of dough over filling; sprinkle top with remaining 2 tablespoons sugar.
Bake 40 to 45 minutes until the top is golden brown and cooked through. Let cool and serve with vanilla ice cream if desired.
